Process:
Every bean is meticulously selected and subjected to a remarkable 700 – 1000 hours of carbonic maceration fermentation. This time-honored technique gently coaxes out the intricate flavors and deep, resonant aromas our coffee is celebrated for.
After a month of careful stabilization, a process that ensures the perfect balance and consistency, the beans are threshed and handpicked once more. This final touch of artisanal selection is what sets the coffee apart, culminating in a product that's ready for the discerning international connoisseur.
Carbonic Maceration begins with previous fermentation of cherry coffee between 18-24 hours, then the coffee is pulped and goes to the barrels in which the oxygen is exchanged with CO2 through injection.
This method is modifying atmosphere allowing yeasts and native bacteria to work efficiently.
Drying
Solar drying for twenty-five days and five days of mechanical drying.

It hasn't been long since the conversation about specialty coffee began in Colombia, and Chucho was undoubtedly there from the start. As one of the first Q graders in Colombia and an expert in the country’s specialty coffee, Jesus has made a name for himself as a distinguished roaster and taster, renowned in the coffee world both locally and throughout Central America.
Inheriting two plots of land from his father, Chucho has done, by his own account, what a specialty coffee farm should do. He believes in diversifying plantations, integrating coffee with other trees and crops to enhance growing conditions. His farm cultivates a variety of strains such as Gesha, Tabi, and Bourbon, maintaining production levels while utilizing natural fertilizers that contribute to
environmental quality. This commitment to sustainable farming and quality improvement has culminated in a product that an expert like him would endorse.
